Base:
– 2.5 cups rolled oats
– 1 teaspoon cinnamon
– 1 teaspoon baking powder
– 1 teaspoon salt
– 1 cup plant-based milk of your choice
– ¼ cup maple syrup
– 3-4 tablespoons ground flax seeds
– 2 bananas
– some vanilla
Different flavors:
Chocolate (2-3 tbsp chocolate chips or chunks)
Apple-cinnamon (2 tbsp apple sauce, 1 apple cut into small pieces and cinnamon)
Blueberries (3-4 tbsp fresh or frozen blueberries)
Nuts (2 tbsp nut butter and whole or chopped nuts of your choice)
The ingredients can be changed and adapted as desired.
Preparation:
– Preheat the oven to 175°C hot air.
– Line the muffin tray with paper cases.
– Mix all the ingredients for the base mixture.
– Divide the mixture into 4 small bowls and mix in the respective ingredients (from the 4 varieties).
– Spread into the ramekins, garnish and bake in the preheated oven for approx. 30-35 minutes.
Tip: The Baked Oat Meal Muffins can be frozen and defrosted in the oven at approx. 170°C in 5-10 minutes. So you have a quick breakfast without “kitchen chaos”.
They also make a healthy change for the children’s lunchboxes, as they taste just as delicious cold.
