Head Chef Martin in an Interview
Dear Martin, could you briefly introduce yourself?
My name is Martin Börst, I live in Hüttschlag and have been working at Moar Gut since September 2008. In autumn 2024, after eight years as Sous Chef, I took over the position of Head Chef.
How did you come to Moar Gut?
A former colleague from Berlin introduced me to *Rolling Pin* magazine. There, I discovered Moar Gut – a property surrounded by nature that immediately appealed to me. I applied, drove overnight from Berlin to Großarl, had my interview with Sepp, and then headed straight back to Berlin. One week later, I started my first day at Moar Gut – and I have been here ever since.
What makes Moar Gut so special to you?
Over the years, countless funny stories have accumulated. Since day one, I have always interacted with the owners on equal footing – many things are discussed directly, and a handshake still means something here. Some of our returning guests have also become friends over the years, and I visit them regularly. In addition, I have worked side by side with many colleagues for a long time. That is what makes Moar Gut so special to me.
Is there a particularly memorable or funny experience from all these years that stands out?
One of my fondest memories is our kitchen team trip to Spain in 2014. We first visited Palma and then continued on to Barcelona. Not only did we have the opportunity to immerse ourselves in the local culture and cuisine, but we also grew much closer as a team. When you work together in the kitchen all year round, it is especially rewarding to travel together and get to know each other on a more personal level. During that time, deep friendships were formed that I still value greatly today.
How do you balance your work life?
Nature, hiking, and travelling. Whenever possible, I enjoy discovering new places, trying different flavours, and gathering inspiration during my travels.
What helps you unwind after a long day?
When I come home, it is always wonderful to be greeted so warmly. Our three dogs are excited to see me every single time – no matter how demanding the day has been, how tired I am, or what I look like. They come straight to me, seeking affection and a few strokes, which I gladly give them. No words are needed – just a simple and genuine understanding.
