Vegan gingerbread energy balls

Ingredients

  • 200 g ground nuts
  • 250 g dates (weight without pits)
  • 1 tsp cinnamon
  • 5 tbsp cocoa powder
  • 2–3 tsp gingerbread spice
  • Desiccated coconut and cocoa powder for coating

Preparation

  • Soak the dates in warm water for 30 minutes.
  • Then drain the dates, place them in a blender, and blend them as finely as possible.
  • Add the ground nuts and all the spices. Blend again and taste the mixture.
  • Form small energy balls. (If the dough is too crumbly, blend in a few more dates.)
  • Roll the small balls in coconut or cocoa powder.

Store them in a sealed container in the refrigerator or package them as a gift.
